The “A Matter of Taste” column in the January/February issue of Christian Woman featured recipes that were traditional for the new year. Some of them included Collard Greens with Ham Hocks, Black-Eyed Pea and Sausage Soup, and this yummy recipe for Crispy Cheese Wafers. They’re a great addition to a soup supper or for a snack. Crispy Cheese Wafers
Think cheese straw with a crispy crunch and shaped like a coin. Pre-shredded cheese is too dry for this recipe; shred your own.
1 cup butter, softened (not margarine)
1 (8-ounce) block cheddar cheese, shredded
2 cups all-purpose flour
1 1⁄2 cups crispy rice cereal (Rice Krispies)
1⁄2 teaspoon salt
1⁄8 teaspoon ground red pepper
Beat butter in a large bowl at medium speed of a mixer until creamy; add cheese, beating until combined. Add remaining ingredients, beating on low speed of mixer just until combined.
Shape cheese mixture into 24 balls and flatten to 1⁄4– to 1⁄2-inch thick on ungreased baking sheets. Bake at 350 degrees for 15 to 16 minutes or until lightly browned around edges. Yield: 2 dozen.
