Think of cheese quesadillas as a blank canvas; add your favorite snack or sandwich toppings to create your own masterpiece. Add veggies to increase their health value and to make them more filling. Quesadillas are quick to make and can be eaten on the go.
8 (8-inch) flour tortillas
2 tablespoons butter spread, divided or cooking spray
1/4 cup pizza sauce or marinara sauce
1 1/3 cups (6-ounces) shredded mozzarella cheese, divided
20 slices turkey pepperoni
Spread butter evenly over tortillas or coat with cooking spray. Heat a large nonstick skillet over medium heat; place one tortilla, buttered side down, in skillet. Spread 1 tablespoon pizza sauce over tortilla; sprinkle with 1/3 cup cheese and top with 5 slices pepperoni. Place another tortilla, buttered side up, on pepperoni. By this time, bottom tortilla should be golden brown.
Quickly flip quesadilla with flat spatula; cook 1 to 2 minutes until golden brown and cheese melts. Remove quesadilla; set aside. Repeat procedure with remaining ingredients. Cut into desired number of wedges. Yield 4 to 6 servings.
